I thought I would chime in here as my situation is somewhat similar in that I have 2 small children and a full time job and a part time job. Lucky me though, my primary job is in radio so I can work on my abilities there and my secondary is news reporting for some small market radio stations, once again allowing me to work on my sound.
Just to start Jon, I would say, read the posts here in all the sections that pertain to any questions you might have. Knowledge is power. I have been reading and researching for about 6 months now and still am not ready to produce a professional demo.
I do gratis work for people I know and for the Clear Channel national production warehouse just for the pratice.
I was lucky enough to accquire most of my equipment at low or no cost, but my situation is unique.
Plan on spending some money to start out, even if you do not plan on setting up a home studio. Books and Audio on the business and some vocal coaching is almost mandatory BEFORE you even start to think of doing a demo. Just do as much as you can in your limited spare time reading books and magazines out loud.
What I have found to be good is reading to my kids every day. It helps me with my skills and the kids LOVE spending time with daddy.
