I have a (potential) client that wants me to record some audio for an Avaya phone system and the audio file MUST have the following settings. I am using audacity and Reaper as my DAW's currently and I have NO idea how to record for a CCITT u-law.
(The below was sent from the client)
Bit Rate: 64kbps
Audio Sample Size: 8 bit
Channels: 1 (mono)
Audio sample rate: 8 khz
Audio Format: CCITT u-Law

It can be done in both programs. it will like show up as uLaw and will end up tagged as a .wav
Do a Save As after recording and set your parameters in the dropdown boxes (where you select the format to save.
uLaw is always 8 bit.

Sorry I'm late to the party
Haven't had a chance to looked at Yoni's links but your setting is at 8bit PCM which is not what you want.
It should be 8 bit Mu-Law or U-Law (They are the same thing)
