By the way, Tom, how did your bird turn out. Was it worth the extra work to put it in a brine?

It was the best turkey we've ever made! I'll be doing that every year from now on. I don't know if it was the brine or the shorter roasting time after the initial 500 degree blast... but that was the juciest bird I've had in a long time. I just finished some leftovers. Wink
