how do you say web addresses with the .co extension?

Dot coe?

If that's how the domain ends, I'd say "dot see oh".

I have heard UK addresses spoken as "double-u double-u double-u dot domain dot coh dot euw kay"

I'd want a Brit to confirm or deny that that's the practice, though.

I work with a bunch of aussies on a Shoutcast station, so I'll ask one of them this evening how radio ads say domains in their area this evening and let you know what they say.

Spoke with an Aussie friend of mine who said that the "see oh dot yew kay" was the more common vernacular in AU. The AU domain structure is "com.au".
