1. Give the entire book a read before you record, so you can find words you need help pronouncing. Also to get a good feel for the author's tone.
2. Hire an editor.
3. Hire a QC person.
4. Relax, trust yourself.
5. Ask all the questions you need to, of the author and of your tribe.
6. You've got this!

If you know the difference between tsp. and TBSP you're off to a good start. You're in luck in 2020. If you see some unfamiliar terms there is surely a reasonably reputable video online that'll show you how to say them. Except for Paula Deen who puts too many syllables in words like "papareeka".

It's a cookbook.
So... from me it's a big 'Meh" to reading it through beforehand. It's not as if you're going to find out in the penultimate chapter that the protagonist is an Albanian with a lisp!
Seriously, this is a business and the audiobooks on ACX are probably paying anything between $0 (if it's a royalty share) and $225 per finished hour. If it's a six hour read, it's probably going to take you between 24 and 36 hours to complete the job (assuming you self edit etc.). I'd be reluctant to waste another four to six hours pre-reading something that has neither plot nor characters. If you come across a "difficult" word... read it, mark it, and check at the end if it's kosher. If this was a character-driven novel, I'd agree with the pre-reading (maybe). That happened to me. Italian grandmother came in in early chapter, finally, several chapters later it was revealed that she was a 2nd generation Italian business woman. Had to go back and redo all of her stuff. _________________ Playing for a living...

Yeah, that's terrible writing. The author should flesh out all the characters early on so we, the readers and listeners, can paint the overall picture in our minds. However, the author is the captain of their ship even if they run it up on the rocks!

The story I like the most (and please, please, please, let it be true!) is that our own illustrious Jeff Kafer found out at the end of a book that the character was supposed to be Canadian. He went to the author and asked him is it was really necessary... and to change the book. The author complied. Obviously this can only work if it's a simultaneous release... but sometimes, you have to be the captain of the ship. I have never read the table of contents. I have a feeling it would become tedious to the listener, but that's just my dos pesos.

If the chapters are major food categories reading them might be helpful to the listener. If they’re just numbers, not so much.

IMHO, this is an instance where I'd ask the author what their favored approach would be. I think it would be helpful to offer them some options. I would definitely offer:
1. No table of contents
2. Only read major food category/chapter references _________________ * * * * * * * * * *
